Es el más conocido por los turistas y se trata de carnes cocinadas al carbón acompañadas generalmente por batata, patata o verduras.
La carbonada es un plato que dependiendo de la región en la que lo encuentres tendrá algunas diferencias. Se elabora con una especie de calabaza llamada zapallo, carne, tomates, duraznos, arroz, choclo y patatas, normalmente se sirve dentro de la calabaza como si esta realizase la función de plato.
El locro es un estofado elaborado con maíz o trigo, cerdo, cebolla, pimentón, porotos, ajo picante y chorizo rojo.
Este manjar es uno de los más conocidos en el mundo entero y es que no es para menos. Es un pastel salado relleno de jamón, queso y carne que se cocina al horno y se puede servir con o sin picante.
Los tamales son una base de masa de maíz que se rellena con carne bovina o pollo y se envuelve con las hojas de este para hervirse.
