En poco tiempo, el Teppanyaki se ha convertido en una palabra de moda. Sin embargo y aunque parezca algo complejo, te sorprenderá saber qué es realmente este término de la cultura asiática.
El Teppanyaki es una pieza clave en la gastronomía japonesa que ha convertido su cocina en espectáculo. Cada vez con mayor frecuencia es típico ver en woks y restaurantes asiáticos una plancha de metal donde el cocinero elabora con grandes llamaradas de fuego algunos platos.
Pues sí, esto es el Teppanyaki, nada más y nada menos que una plancha de acero donde se cocinan distintos tipos de pescados, carnes y verduras. Los chefs que se dedican a ello están altamente cualificados para poder ofrecer el plato más sabroso acompañado de un pequeño show.
Este término proviene de dos palabras con significado propio y es que “teppan” significa plancha y “yaki” significa asado. Los platos que se cocinan en estas planchas reciben el mismo nombre; Teppanyaki.
Shigeji Fujioka, chef y empresario, fue quien originó en 1945 esta vertiente culinaria para artistas, oficiales y soldados estadounidenses que frecuentaban su restaurante Misono después de la guerra.
Tanta fue la fama que en 1960 amplió su negocio abriendo más restaurantes. A día de hoy existen cinco de ellos situados en Kobe, Tokio, Osaka y Kioto y miles de chefs utilizan su invento.
Una de las ventajas importantes de cocinar con esta plancha es que nos expone un amplio abanico de oferta, se pueden cocinar al mismo tiempo distintos alimentos y de diversas formas.
Además, nos permite seguir un estilo de vida saludable ya que hace falta poco aceite para cocinar los platos. En ella podemos saltear la carne, añadirle verduras, elaborar platos de pescado u otros e incorporar distintas salsas.
Un plato que gusta mucho a los comensales es el pollo con verduras. En nuestro wok podrás escoger las verduras al gusto que prefieras, tantas como quieras, algunos trozos de pollo y llevarlos al chef. Una vez allí, solo tienes que pedirle que añada salsa de soja y algunas semillas de sésamo. El pollo también puedes cambiarlo por otro tipo de carne que te guste más o incluso combinarlo con varias.
Otro manjar del que muchos disfrutan son los mariscos. Puedes saborear unas deliciosas navajas, mejillones con limón, calamares con salsa verde, almejas blancas, cangrejo azul, langostinos, cigalas, etc.
El salteado de setas y verduras es otra opción demandada con frecuencia por los huéspedes y además es completamente vegano. Para esta receta puedes escoger champiñones, setas, pimiento verde, pimiento rojo, brócoli, zanahoria y cebolla. Llevarlo a nuestra plancha Teppanyaki y pedir al chef que le añada salsa teriyaki. Quedará un plato delicioso.
La clave de esta receta es escoger un tierno lomo de atún y pasarlo vuelta y vuelta por la plancha de forma que su interior quede crudo. Esto junto a la salsa formará una combinación especial y sencilla de la que seguro que disfrutarás. También es importante que no ahogues el atún con el Teriyaki, sino que lo bañes de forma que su sabor no sea tan fuerte que esconda el del trozo de pescado.
