Lo primero que debes de hacer es preparar el arroz. Para ello, debemos lavar bien el arroz para eliminar el máximo algodón posible y que el arroz quede más suelto. Ya que es la base de cualquier rollo de sushi. Lo sazonamos con una mezcla de vinagre de arroz, azúcar y sal. Mientras preparamos el arroz, debemos de ir trabajando el pescado. El corte del pescado es fundamental. Nuestros chefs deben saber los diferentes cortes de pescado, es decir, en rodajas finas y uniformes para que, una vez en la boca, bailen con en paladar. Una vez tengamos el arroz listo y el corte del pescado llega el momento del enrollado. La técnica de enrollar rollos de sushi requiere práctica para lograr un resultado perfecto. Se pone una capa uniforme de arroz sobre una hoja de alga, se ponen los ingredientes en el centro y se enrolla firmemente utilizando un tapete de bambú. Así se quedan compactos sin que se deshagan. Para finalizar, dependiendo del tipo de sushi se debe recurrir a un tipo de presentación u otra. Por ejemplo, en algunos casos, se utiliza una zanahoria en tempura para acompañar, además de decorar con algunas hojas de jengibre y wasabi.
