Las últimas tendencias healthy presentes en los últimos tiempos nos han traído formas de alimentación y de vida en general más saludables y respetuosas con el medio. No solo healthy, sino que el movimiento vegetariano y vegano cada día gana más adeptos. Puede que esta tendencia aumente año a año gracias a los alimentos que vienen de otras culturas que nos ponen más fácil la posibilidad de evitar las proteínas y nutrientes animales sustituyéndolos por otros sin que nuestro cuerpo se resienta.
Un ejemplo de estos alimentos es el Tofu, seguro que has oído hablar de él en más de una ocasión. Ya que en la actualidad forma parte de numerosas recetas gracias a su versatilidad y aportaciones a nuestra dieta y a nuestro organismo.
Aunque para nosotros es relativamente nuevo, el Tofu es un alimento milenario, cuyo origen viene desde China. Lo encontrarás en forma de cubo o rectángulo blanco y de textura firme, como si fuera un queso fresco, pero proviene de la soja.
Está compuesto por leche de soja, texturizantes y coagulantes y agua. Y se fabrica igual que un queso fresco, de hecho también se le llama el queso de soja.
Aunque nació en China, pronto se extendió por toda Asia, gracias a ser un alimento con buen sabor, versátil a la hora de cocinarlo, con muchos nutrientes y con un precio asequible.
Como explicamos más arriba, no solo las tendencias healthy han favorecido el consumo del tofu, sino los numerosos nutrientes que nos aporta:
Posiblemente sea la más conocida, el tofu es utilizado en dietas vegetarianas, y sobre todo veganas, como sustitutivo de la carne, por ser una fuente esencial de proteína vegetal.
El tofu solo contiene un 4% de grasa y 70 calorías por cada 100gr., lo que lo identifica como uno de los principales aliados en las dietas para bajar de peso.
Los ácidos grasos, vitaminas E y lecitinas que contiene favorecen a regular la presión arterial reduciendo el colesterol malo y los triglicéridos.
Las vitaminas y minerales, así como los fitoquímicos que contiene ayudan a nuestro cuerpo a fabricar anticuerpos para protegernos de enfermedades ante agentes externos.
Además de ser ideal para fortalecer nuestros huesos y dientes, es un aliado en las mujeres en el momento de la menopausia ya que ayuda en la pérdida de masa ósea. Además gracias a su contenido en isoflavonas ayuda a regular las hormonas.
Sus nutrientes antioxidantes apoyan a nuestro organismo en evitar el envejecimiento, retrasando la acción de radicales libres.
Ayuda a mantener los niveles de glucosa en sangre, gracias a su bajo aporte calórico, por lo que ayuda a prevenir la diabetes tipo 2.
En general, el tofu contiene numerosas vitaminas, minerales y fibra que ayuda a nuestro organismo a mantenernos sanos.
Podríamos decir que el tofu es un queso libre de lactosa, además apto para dietas veganas.
A pesar que es un alimento vegetal, hay que tener en cuenta que siempre hay que consumirlo cocinado. Al igual que las legumbres, si se consume crudo puede ser indigesto.
Aunque los envases no lo suelen indicar, las recomendaciones para cocinarlo de la mejor forma es hervirlo unos minutos y después se puede cocinar de infinidades formas.
El tofu se puede utilizar de acompañante de la pasta o verduras, o incluso para hacer salsas de sustitutivo de la nata o para mayonesas veganas, sustituyendo el huevo.
El tofu tiene infinidad de aplicaciones en cocina, pero este movimiento acaba de empezar, y aun así hay una infinidad de recetas disponibles, además de recetas típicas del recetario español adaptadas a los movimientos healthy o veganos.
