El chef Shigeji Fujioka empezó a cocinar platos más elaborados en una especie de lámina fina de metal y, aunque esta variante gastronómica naciese en el país nipón, tiene una fuerte influencia occidental. Esto desembocó en que también se popularizase en Estados Unidos.
Sin embargo, Teppanyaki no es un término que haga referencia al instrumento de cocina sino al tipo de gastronomía en sí. Teppan significa plancha de hierro y yaki cocina en plancha, por lo que al referirnos a Teppanyaki nos estamos refiriendo a todos los platos que se cocinan en este tipo de plancha.
