Simplemente tienes que poner una olla con agua, aceite y un poco de sal, cuando hierva introducir la pasta el tiempo recomendado, entre 6 y 10 minutos dependiendo del resultado que queramos obtener, más al dente o más blanda.
Existen infinitos tipos de salsas para spaguettis con las que podemos combinar este plato estrella; carbonara, pesto, tomate, boloñesa, de nueces, con salsa de curry, de setas e incluso al estilo thai. La mayoría de estas las puedes encontrar en libros de cocina o internet.
Esta salsa es una de las más típicas en Italia y como su propio nombre indica proviene de una de las ciudades más conocidas, Boloña. Existen infinitas recetas y discusiones sobre la versión real de esta salsa, como se suele decir “cada maestrillo tiene su librillo”.
Ingredientes: 1 cebolla picada, 1 rama de apio picado, 1 zanahoria picada, 250g de carne picada, 1 cucharada de concentrado de tomate, 40g de mantequilla, 2 cucharadas de aceite de oliva, sal y pimienta
Elaboración: Calentamos la mantequilla y el aceite de oliva en una cazuela pequeña. Añadimos la carne, la zanahoria, el apio y la cebolla. Echamos la sal y la pimienta al gusto. Mezclamos todo bien y lo cocemos a fuego lento durante unos minutos hasta que las verduras queden tiernas y la carne algo dorada. Vertemos el tomate y un poco de agua y removemos hasta conseguir una salsa homogénea. Si se queda seca podemos añadir un poco más de agua caliente.
Se trata de una salsa de temporada, es decir se aconseja realizarla en época de setas, si no es así también se puede hacer con setas deshidratadas.
Ingredientes: 25g de setas, 1 cebolla pequeña, 5 cucharadas de vino blanco, 3 cucharadas de concentrado de tomate, 2 cucharadas de aceite de oliva, 40g de queso rallado y sal
Elaboración: Picamos la cebolla junto las setas (lavadas y escurridas con anterioridad). Freímos a fuego lento, en una cazuela con aceite, la cebolla y las setas. Vertemos 120 ml de agua y salamos ligeramente. Agregamos el vino y cocemos hasta que se evapore. Añadimos el tomate y lo mantenemos a fuego medio durante media hora aproximadamente. Por último añadimos el queso al gusto.
